INGREDIENTS:
4x5oz boneless skinless chicken breasts
2 garlic cloves
salt & pepper
2tbsp very low fat natural fromage frais
1 tbsp freshly chopped parsley
3 level tbsp grated parmesan cheese
1 egg beaten
1oz golden breadcrumbs
Fry light to spray baking parchment
Lemon wedges to serve.

   
       
  Heat oven to 190C/375F/gas5. Slice the chicken breast lenghtwise to form a pocket.. Peel and crush the garlic cloves and mix witht eh fromage frais, parsley and 2 tbsp parmesan. Spoon the mixture into the chicken pocket and press together gently to seal. Secure the the cavity by skewering with a cocktail stick and put the chicken breasts onto a sheet of baking parchment. Brush all over with the beaten egg and sprinkle with half the breadcrumbs. Sprinkle the remaining parmesan over the chicken. Bake for 25/30mins until lightly golden and cooked through, then serve with the lemon wedges.
