Wholemeal shortcrust pastry or bought pie case:
Ingredients:
1lb potatoes
1lb onions
3tbsp of rape oil
1oz butter
A bunch of parsley, chopped.
8oz grated cheese
2 crushed garlic cloves
1tbsp milk
salt & pepper to taste

Will make 6 individual pies or 1 large pie.

Roll out the pastry and line six 4" individual flan tins or on 8" flan tin. Boil or steam the potatoes until tender. Chop onions finely anda saute in the oil until really soft. Combine the potatoes and onions, add the butter, parsley, half the cheese, garlic, milk and season well, to taste. Cool, then use to fill the pastry cases. Sprinkle with the remaining cheese and bak in the oven at 220C (425F/Mark7) for about 25mins until golden.
