Wholemeal shortcrust pastry (or bought pie case)
Will make 6 individual pies or 1 large pie.
Roll out the pastry and line six 4" individual flan tins or on 8" flan tin. Boil or steam the potatoes until tender. Chop onions finely and a saute in the oil until really soft. Combine the potatoes and onions, add the butter, parsley, half the cheese, garlic, milk and season well, to taste. Cool, then use to fill the pastry cases.
Sprinkle with the remaining cheese and bake in the oven at 220C (425F/Mark7) for about 25mins until golden.
NB: To save time you could always buy ready made pastry cases.
